The'Cultivated meat' is not meat: these are proteins produced in vitro from cells taken from animals. The Fiorentina Academy takes a stand against synthetic food by signing the Coldiretti Toscana petition in support of the legislative process opened by the bill approved by the Council of Ministers that, based on the precautionary health principle, provides for the ban on the production and placing on the market of synthetic food and feed.
The Fiorentina Academy, cultural association that from beyond 30 years celebrates the Florentine steak in its aspects of historical research, sociale, scientific and gastronomic, started the process to include the local dish last February, among the most famous in the world, in the European list of Traditional Guaranteed Specialties (STG). “Cultivated meat that does not come from farms but from cell cultures in the laboratory – explains Giovanni Brajon, president of the Fiorentina Academy – cannot be accepted in the specifications that distinguish a dish it represents, at least 30 age, the tradition and culture of a territory. The Florentine steak is in fact the result of a supply chain product that starts from the work and daily sacrifice of generations of farmers who work with care and attention in territories that would otherwise be abandoned to continue with the traditional processing in the butcher's shops and the expert cooking of the chefs. – continues the President of the Fiorentina Academy – If we want to talk about the tradition and culture of this gastronomic symbol we cannot accept the option of cultured meat".
